Beef-rib soup in Hamhung was called karitguk (kari meaning rib).
Beef ribs are boiled thoroughly and seasoned, before being served with boiled rice.
Hamhung beef-rib soup, together with noodles garnished with marinated fish fillets, was a specialty of South Hamgyong Province.
