South Hamgyong Province

Steamed Chick

   A specialty of South Hamgyong Province, the food is prepared by stuffing a disembowelled chick with glutinous rice and various ingredients and spices and steaming as a whole.
   The food was largely served in the region between June and August, just like tangogi soup in the hottest midsummer days.
   It was an invigorating dish for those with poor appetite and after illness as well as weaklings.
