Yongchae kimchi
Garden cress kimchi, similar to leaf mustard kimchi, is prepared with leaves of garden cress collected in autumn. The leaves are first pickled in brine, added with leek, garlic, ginger and red pepper powder, put in a jar and sealed. It was a special side dish for treating guests.
The dish looks yellowish and tastes pungent and refreshing.
It has long been a specialty in the Kilju and Myongchon areas of North Hamgyong Province.
